Stratheden Distillery – 1829-1926 –
Sweet and peppery to taste, at bottled strength, with a trace of salt and a warming, medium-length finish. Lingering heat. Similar profile with water, at reduced levels, but without the salt and warm finish.

Hard boiled Free-Range egg, wrapped in house-made sausage, breaded and fried

The Gerston Distilleries- 1796-1882 & 1886-1914 –
Smooth texture, sweet taste with smoke in the finish and a mineral twist. Water softens the texture; less sweet but still smoky, and a lingering smokiness in the aftertaste.

ENTREE
Pork Porterhouse with Charred Apple Demi-Glace, “Neeps” and Mash
Served with ~ Gerston Vintage
Smooth texture, sweet taste and a surprising amount of smoke in the finish – more coal smoke/steam engine than peat smoke. An unusual, antique taste, which holds up well with a drop of water, although the smoky element is reduced.

DESSERT
Pear Tart
Served with ~ Auchnagie
Auchnagie Distillery – 1812-1911 –
Very sweet to taste at bottled strength, with considerable spice across the tongue and a warming, medium-length finish. Fruity boiled sweets in the aftertaste. At reduced strength it is less sweet and less spicy, but remains fruity, with a trace of vanilla sponge – Eve’s Pudding.

Untouched by wood barrels, unmarked by aging, our crystal clear Plata is the purest expression of 100% agave flavor. Its floral, herbal notes take you by surprise.  Lime Shot takes our Plata tequila and adds a hint of lime and salt. But more than that, it’s a ritual in a bottle, brought out when you need everyone to gather around, kick the party off and grab life by the Hornitos®.

Corazon Blanco has aromas of sweet cooked agave with fruity and floral notes.  Flavors of cooked agave with citrus and pear, finish with a long, elegant and creamy texture.

Orange Lobster Salad with Lime Mezcal Cilantro dressing

Served with ~ Cazadores Reposado

Cazadores Reposado gets its name from resting for over two months in new, small, American White oak casks (instead of used bourbon barrels).  Made from 100% Blue Agave gives it a rich aroma and flavor.

ENTREE

Brazilian Steak stuffed with Shrimp & Pepper jack cheese, topped with Roasted Red Pepper Hollandaise, served with green chile cheesy grits

Served with ~ Corzo Anejo

Our Anejo is twice mellowed during its crafting to achieve an unparalleled smoothness and a refined taste.  Aromas of warm caramel and flavors of honeyed toast, brown spice and dates.  Finishes long and smooth, with a sweet fade of baked fruits, spice and toffee.

Tres Leche Flan with coffee patron caramel sauce

Roasted, malted and raw cocoa, reminiscent of the traditional mole, is infused into our 100% agave tequila.  This results in a peppery, dark, roasted and malted cocoa taste.
