Connemara 8 Year

Connemara Peated Single malt Irish whiskey is inspired by the ancient Irish tradition of drying malting barley over peat fires. For centuries, peat (or turf as it is known locally) was widely used in Ireland to dry cereal crops and to fire the stills. Over the last century this tradition was lost until Cooley revived it to produce its world famous Connemara Single Malt.

Marinated Grilled lamb chop on a potato cake with a minted lamb jus and crispy parsnips

 

Kilbeggan

Kilbeggan is a uniquely Irish whiskey. Like most Irish people, Kilbeggan is easy going and approachable, but with its own distinctive style. The finest grain and malt whiskeys are blended together for the smooth, sweet taste and lovely malty finish that is Kilbeggan Irish whiskey.

Greenore 8 Year Old Single Grain

A truly unique whiskey as it is the only expression of Irish Single Grain whiskey in the world. Single Grain whiskeys are very rare as most Grain whiskey is normally mixed with Malt whiskeys to make Blended whiskey. Greenore is distilled from maize/corn and is matured for 8 years exclusively in first fill ex-bourbon casks. Each bottling of Greenore Single Grain is made up of a small batch of casks that have been hand selected by our Master Blender for their exceptional quality.

Tyrconnell Single Malt

Tyrconnell dates back to the glory days of Irish whiskey. Traditionally, most Irish malt has been used to create blended Irish whiskey so it is rare to find Irish malt whiskey bottled in its purest form. Distilled in the old Irish tradition this pure pot still single malt whiskey uses only the most natural Irish ingredients of barley and fresh spring water. The resulting whiskey is then left to peacefully mature in oak casks stored in 200 year old granite warehouses allowing it to develop its full flavor and character

Tyrconnell 10 Year Madeira Cask

Tyrconnell 10 Year Madeira Cask is full gold in appearance, with a full nose and fruity aromas with a playful citrus spritzyness.  On the palate a tang of oranges and lemons with a strong malt presence that balances well with the oily sweetness.  It finishes long with the malt becoming more prominent.

Balvenie 17 Year Peated Cask

 In 2001, a heavily peated batch of barley was distilled at The Balvenie Distillery and was allowed to mature until The Balvenie Malt Master, David Stewart, decided it was time to rejuvenate the maturation process and so the whisky was transferred to newly prepared traditional casks. The casks that had originally held the peated liquid had taken on much of its character and so David decided to experiment by filling them with 17 year old Balvenie for a short period. The result was an intensely peaty whisky. Marrying this liquid with 17 year old Balvenie finished in new American oak casks produced The Balvenie Peated Cask, a complex single malt that is rich and spicy with layers of smokiness.

Balvenie 15 Year Single Cask

The Balvenie Single Barrel is a 15 year old single malt which is drawn from a single traditional oak whisky cask of a single distillation. Whilst each cask is subtly different, The Balvenie Malt Master selects only those casks which have the essential characteristics of The Balvenie Single Barrel, particularly honey, vanilla and oaky notes. Each bottling forms a limited edition of no more than 350 hand-numbered bottles – so each bottle is unique and unrepeatable.

Balvenie 12 Year Double Wood

The Balvenie DoubleWood is a 12 year old single malt which gains its distinctive character from being matured in two woods. Over its period of maturation it is transferred from a traditional oak whisky cask to a first fill European oak sherry cask. Each stage lends different qualities to the resulting single malt ~ the traditional casks soften and add character, whilst the sherry wood brings depth and fullness of flavour.

Balvenie 14 Year Caribbean Cask

Black Bush

With an intriguing flavor and a name to match, this is our special blend.  It combines a uniquely high proportion of malt whiskey matured in former Oloroso Sherry casks with a sweet, batch-distilled grain whiskey  This unique recipe gives Black Bush its rich fruity notes and deep intense character, balanced by a unique smoothness.  The nose is big and full with a rich fruitcake aroma and intense Sherry sweetness developing into dried fruit, raisin and Christmas cake notes.  It is soft and silky on the palate with a nutty character.  A lingering sweetness on the finish shows a remarkable balance between the poier from Sherry-seasoned casks and the smoothness of the spirit.

Caramelized Onion Dip with Cilantro-Garlic Pit Crisps

Bushmill’s 10 Year

Triple distilled from 100% malted barley and matured for a minimum of 10 years mainly in Bourbon-seasoned barrels, it has aromas of honey, vanilla and milk chocolate.  The nose is fresh and zesty with notes of honey and ripe fruit.  Soft on the palate flavors of vanilla, milk chocolate and toasted wood finish crisp, clean and gently drying.

Steak Waldorf Salad with Red Apples, Spiced Walnuts and a Whiskey Spiked Honey Dijon Dressing

 Bushmills Original

The Cornerstone of the Bushmills family.  It’s a blend of Bushmills own triple distilled malt whiskey with a lighter Irish grain whiskey making it an approachable whiskey with a rich, warming taste of fresh fruit and vanilla.  It has a light and fruity nose with a spicy aroma, notes of vanilla developing into vanilla ice cream and creme brulee.  The gently warming texture coats the mouth and has a touch of honey sweetness.  The finish is crisp and fresh with a touch of spice.

Marinated Porterhouse Steak with Parmesan Paprika Butter, Wasabi Green Onions, Mashed Potatoes and Hericot Verts with Bacon

 

Bushmill’s 16 Year

This distinctive Irish malt whiskey is aged for 16 years in a combination of Oloroso Sherry and Bourbon-seasoned casks, then matured for several months in Port wine barrels – a unique maturation which imparts distinct notes of juicy fruits, nuts and spice, as well as a hint of ruby redness.  The robust nose carries notes of treacle toffee and sweet spice.  Full bodied with flavors of praline, honey, caramelized fruits and toasted nuts.  Deep finish of jammed berries and dark chocolate.

Dewars White Label Blended Whiskey

In 1899, Dewars’ first Master Blender, A.J. Cameron created White Label.  Since then, it has won over 100 awards and is as full and round as it’s always been. A swirl of honey, with a sprig of Scottish heather. Rich, golden and warm. Clean, fresh vanilla, with a slice of pear. Soft, fruity and well-rounded.

Dewars 12 Year Blended Whisky

After aging, Dewars 12 year is returned to Vintage oak casks and aged again so it can mature a little more.  This extra step is called double-aging.  It means the flavors stay awhile in the cask creating an even smoother blend, with a long lingering finish.  A drizzle of honey, homemade toffee apples & crumbly fudge. Warm, buttery and mellow.  Juicy sultanas and fresh citrus with a wisp of vanilla. Clean, full and lively.  Melted caramel, folded in slowly with a trace of oak. 

Rounded, smooth and lingering.

 

Hearts of Romaine, Tomato and Onion Salad

Dewars 18 Year Blended Whisky

Only using Scotland’s finest 18 year old malt and grain whiskies to create the full, smooth & creamy blend that is Dewars 18.  They return their blend to vintage oak cask for double-aging.  Slow spoonfuls of honey poured over fruit.  Rich, golden and mellow.  Almond and vanilla cream with smooth butterscotch Soft, buttery and sweet.  A full finish, rich oak and deep velvet.

 Long, reassuring and lingering.

 

Crab and Shitake Stuffed Filet Mignon with Diver Scallops

Aberfeldy12 Year Single Malt Whisky

Almost incense-like on the nose, with heather honey and a fruity softness, notes of pineapple, toast and cereal.  On the palate; full bodied & syrupy, lingering on the tongue like a liqueur.  Full flavored finish with the perfume characteristics becoming more spicy and a bitter hint of Seville oranges in a decidedly dry finish.

 

Chocolate Explosion with Vanilla Ice Cream

Aberfeldy 21 Year Single Malt Whisky

Deep gold color with amber highlights and a pleasing aroma of heathery honey followed by a fruity softness, hints of vanilla and burnt wood.  Full flavored on the palate with touches of Seville oranges lingering on the tongue.  Full bodied with a long, spicy, dry finish.

Wild Turkey Kentucky Spirit – Single Barrel Bourbon – 101 Proof

Each barrel is hand-selected at the peak of maturity before the bourbon is poured out and bottled.  Jimmy Russel selects Kentucky Spirit to be fuller bodied, with rich vanilla flavors and a hint of sweetness.  It has a complex layering of almonds, honey, blackberries and leather.  The finish is almost aristocratic – long, dark, lingering, and

crying out for a fine cigar.

A unique marriage of Wild Turkey 6, 8 & 12 year stocks, which give the whiskey a rich, exceptional flavor that is remarkably smooth, considering its high proof.  It is assertive with hints of light oranges, mint, and tones of sweet tobacco.  The finish is long, warm and nutty and lingers in the mouth with hints of hot peppers and well-toasted whole bread.

Wild Turkey “Tradition” 14 Year Bourbon – 101 Proof

Only 30,000 bottles are available worldwide.  Aged for 14 Years in new, white oak barrels with the heaviest level of char.  After aging in the ‘sweet spot’ of the oldest warehouses, the liquid was bottled at 101 proof in order to retain the true bourbon flavor as has always been done at the Wild Turkey Distillery.

The nose includes warming notes of molasses, raisins a mellowed oak married with the fresh essence of peeled oranges, sweet corn, honeydew melon and luscious vanilla.  The taste is bold and crisp, filling the mouth with hints of rye, white pepper and orange zest.  This bourbon builds on the warming notes in the nose and develops flavors of toffee and vanilla.  The finish is very long with toffee and caramel lingering along with subtle undertones of oak and dried tobacco.

~ Scapa 16 Year – Island ~

Scapa is produced in the same small island cluster, The Orkneys, where great scotches like Highland Park are produced. This 16 year expression of the Scapa replaces the 14 year version and offers additional complexity. The Scapa 16 year is a perfect marriage between the influences of the sea, as is found in other island Scotches and the sweet honey and heather notes.

Lobster Scotch-Bisque with Crab Claw

with Vermonte and Chile Oil

~ Dalmore 12 Year – Highlands ~

The exceptional richness of The Dalmore spirit benefits from slightly longer maturation than is typically practiced in Scotland. This Scotch is aged in second fill bourbon barrels and then sherry casks from Spain in equal proportions.

~ Balvenie 15 Year Single Barrel – Highlands~

This 15 Year Single Barrel is drawn from a single traditional oak whisky cask of a single distillation. While each barrel produces a unique whisky that will vary, the master distiller was seeking the foremost characteristics of honey, vanilla and oaky notes. Each bottle is indeed unique and unrepeatable making this a truly one of a kind experience.

 

Filet Mignon Stuffed with Bleu Cheese & Fried Oysters

dressed with Bordelaise and Hollandaise with a Pork Belly Potato Hash

~ Laphroaig Quarter Cask – Island ~

We chose to pair this expression of an Islay Scotch with the flavors from the oysters in this dish. While the Laphroaig Quarter Cask is technically from the same region as the Scapa you will notice a significant difference, which characterizes Laphroaig’s Scotch.

 

Chocolate Hazelnut Torte with Butterscotch Ice Cream

~ Auchentoshan Three Wood – Lowlands~

A.J. Crotty, the Bar Manager at Charlie’s Irish Pub, is quick to point out that Auchentoshan is unique as being from one of three distilleries in the lowlands to still produce Scotch Whisky.
