First Course
Braised Rabbit Tartine
With Herbed goat cheese and roasted beets & carrots.
Paired with La Crema, Pinot Noir, CA
The nose of rich black cherry and subtle rose petal is highlighted by hints of sassafras and orange peel. The palate is rich and round, with brooding black cherry, cocoa and spice.

Second Course
Spinach Salad
With Fresh pears, slivered almonds, Roquefort bleu cheese and maple vinaigrette
Paired with Kendall-Jackson Vintner's Reserve Chardonnay, CA
Beautifully integrated tropical flavors such as pineapple, mango, papaya and with citrus notes that explode in your mouth. A hint of toasted oak and butter rounds out the long, lingering finish.

Main Course
Pan Seared Halibut with Rhubarb Gastrique
Served with Mushroom risotto, Buttered haricot verts, butternut squash and bacon hash.
Paired with Black Stallion, Sauvignon Blanc, Napa Valley, CA
Opens with vibrant, tropical aromas of guava, papaya, lemongrass and honeysuckle, complemented by flavors of lime, lemon, ripe tropical fruit and orange crème. This wine offers bright acidity, light to medium-body and a remarkable finish.

Dessert
Butternut Squash Crème Brulee
With Cinnamon whip cream.
Paired with Rancho Sisque, Pinot Noir, Santa Barbara County
Sweet oak and pepper on the nose, bright acid rounded out with white chocolate followed by smooth, opulent and balance finish.

Bedlam is a band born out of the talent pool of the MN Renaissance Festival. Over the years, the band has had a diverse sound and many different members. Its recent incarnation is a folk band with a hippie attitude. Many familiar songs with a different slant along with some original material as well. As the name implies a stage with this group on it is not a very stable one and you never know who may show up and sit in on a set.

Bacon Wrapped Scallops
With Parsnip puree and wilted spinach.
Paired with Leese – Fitch Chardonnay, Sonoma Coast CA
Aromas of fresh red apple, lemon zest, vanilla whipped cream, fresh baked bread, and hints of nectarine stand out in our 2019 Chardonnay. The first sip showcases lemon curd, delicate tangerine, and pear. The second has a silky vanilla milkshake mouthfeel with a bright grapefruit citrus note and finishes with tart lime and peach frozen yogurt.

Second Course
Spring Mix & Frisee Salad
With Red onion, tomato, goat cheese crumbles, toasted pumpkin seeds and lemon basil vinaigrette.
Paired with St. Supery Unoaked Chardonnay, Napa Valley, CA
Aromas of kiwi fruit, cantaloupe and pineapple leap from the glass. The flavors echo the aromas and add some fresh cream and banana, finishing with ripe Gala apples.

Main Course
12 Hour Braised Short Rib
Served with Stout demi glaze, herbed mashed potato and lemon ginger carrots.
Paired with Troublemaker Red Blend, Central Coast, CA
Comprised of varietals that flourish in Paso Robles’ distinct growing region, Troublemaker consists of Syrah, Grenache, Mourvèdre Zinfandel and Petite Sirah. Syrah is the backbone of the wine, setting the stage for a fruit-forward style and a full body. Sweet and bright red fruit flavors of Grenache blend with the rustic and lively flavors of the Mourvèdre. The Zinfandel adds its signature zing to round out the blend and Petite Sirah contributes to the deep ruby color.
