Floral, herbal hops, & grapefruit citrus notes with subtle orchard fruits are complemented by wood shavings and a little nuttiness. A delicate spicy tone comes through and the lingering fresh fruit & hops give way to grains of barley & a signature smooth finish.

Jameson Caskmates Stout
An initial aroma of freshly cut hay is complemented by a crisp orchard fruit character – green apples and pears, with a twist of lime zest. Mild pot still spices appear, deepening from green tea to hazelnut and milk chocolate. The initial sweet mouth coating typical of the Irish pot still inclusion is quickly complemented by the subtle touch of hops and cocoa beans from the beer cask finish.

Jameson Black Barrel
Time spent maturing in these barrels leads to intensified aromas of butterscotch, fudge and creamy toffee. Nutty notes are in abundance alongside the smooth sweetness of spice and vanilla with a toasted wood finish.

Braised Bison Short Rib
With Colcannon Potatoes, Honey Love Carrots & Pan Jus
Jameson Coopers Croze
A subtle flower petal-perfume develops into rich ripe fruits, while some charred oak and cedar wood bring balance and complexity – a seamless infusion of American and Spanish oak character. The initial impression is from the sweet vanilla of the American ex-bourbon barrels. This brings added depth to the rich fruits typical of the ex-oloroso sherry butts. A pleasant touch of hazelnut and toasted wood complement the pot still spices. With a pleasantly long finish, vanilla sweetness slowly fades to barley grains with a touch of oak char.

Second Course
Deconstructed Ahi Tuna Casserole
Pan-seared rare ahi tuna with tagliatelle pasta, English peas, thyme cream sauce and toasted breadcrumbs.
Paired with Brassfield Pinot Gris (High Valley, CA)
A long and elegant mouthfeel balances bright flavors of green figs, golden raisins, Bartlett pears and a touch of tangerine zest. The wine has brilliant minerality and a refreshing finish.

Main Course
Beef Wellington
Filet Mignon wrapped in puff pastry and topped with wild mushroom demi-glace. Served with honey roasted spaghetti squash & black peppered carrots.
Paired with Robert Hall Merlot (Paso Robles, CA)
Rich aromas of blackberry, raspberry and black cherry accentuated by hints of tobacco. On the palate rich flavors mirror the aromas and are complemented by soft, silky, tannin on the finish.

Bread pudding made with dried fruit and orange liqueur and topped with double whipped cream.
Paired with Van Duzer Pinot Gris (Willamette Valley, OR)
On the nose Asian pears, peaches and a hint of dried apricots swing with guava characteristics. Subtle hints of tropical fruits, guava and passionfruit come through on the mid-palate.
